Dietitian - Centralia, Illinois

DESCRIPTION OF DUTIES/ESSENTIAL FUNCTIONS:
Under general supervision of the Dietary Manager 2, interprets diet prescriptions in the planning and preparation of menus and diets for individuals at Murray Development Center; plans and directs the preparation of diets: participates in the habililation planning process; trains professional and para-professional staff with regard to proper nutrition and dietary requirements. Verifies compliance with Public Health Standards as well as Murray Development Center and Department of Human Services (OHS) policies and procedures regarding nutrition and dietary needs. 
MINIMUM REQUIREMENTS
Requires possession of a current Food Service Sanitation Certificate issued by the Illinois Department of Public Health, or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP). Requires Ucensure as a dietitian nutritionist by the Department of Financial and Professional Regulation: This class is included as an Upward Mobility Program credential title. Requires working knowledge or a large-scale food service program, including modern methods, materials and appliances used in large-scale food preparation and service. Requires working knowledge of health and sanitary requirements applicable to a large-scale food service program.
